Recipes of the Week
Italian Meat Loaf
1 tbls olive oil
3 cups chopped onions (3)
1 tsp chopped thyme
2 tsp kosher salt
1 tsp pepper
3 tbls Worcestershire sauce
1/3 cup chicken stock or broth
1 tbls tomato paste
2 1/2 lbs ground chuck
1/2 cup plain bread crumbs
2 large eggs (beaten)
1/2 cup ketchup
2 Italian sausages (out of the casing and crumbled)
Pre-heat the oven to 325 degrees F.
Heat the oil and add onions, thyme, salt and pepper until the onions are translucent. Stir occasionally, Off the heat add Worcestershire sauce, chicken stock and tomato paste. Allow to cool.
In a large bowl combine meat with sausage mixing the two evenly distribute. Add the onion mixture, bread crumbs, and eggs and mix lightly with a fork. Don;t mash the meat or the loaf will be dense.
Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top.
Bake for 1-1 1/4 hours or until internal temperature reaches 160 degrees. A pan of hot water under the loaf will keep the top from cracking. Serve Hot!
