01/22 Chef Rick Tarantino, Quinoa Salad with Grilled Chicken

Rick Tarantino or Chef Rick as he is know in the media has a diverse back ground that has helped him build a successful career as a celebrity chef. He attended the University of Massachusetts, Amherst Campus and graduated with a Bachelors' of Science from the School of Food Science and Nutrition. Then began his work experience at the prestigious chain of Sheraton Hotels and Resorts from Los Angles to New York's five star St Regis Hotel, Rick worked his way up the corporate ladder. But that was only the beginning, with years of experience in the family hotel business that he was raised in and now with corporate hospitality business under his belt, he began his entrepreneurial career and started Inn Vision a state of the art in-room movie company in hotels around the country. After successfully selling that venture he went back into his family hotel and restaurant business with his father. Emerald Hotel and Resorts International, owned and operated hotels and restaurants in New England.

Rick then returned to school and received his Masters of Science degree from Johnson & Wales University, the world leading hotel and culinary school. Wanting to give back he began teaching at the school. That lead to an opportunity to develop an alumni and development office for the Chancellor, so when his father retired, they sold the hotel company and Rick began his next career as an educator, author and fundraiser. During the ten year period at Johnson & Wales, Rick met Justin Miller a young inspiring 6 year old who loved to cook. Rick trained Justin to become the Guinness Book of Records Worlds Youngest Chef and the two travelled the world cooking and inspiring others. This launched Rick in to the Television and Media industry.

The pair appeared on almost every national television show venue from Good Morning America, David Letterman, Disney, to the Food Network. Rick also became a research chef for many national brands like Westinghouse, Rival's Crock -Pot, Cattlemen's, BBQ sauce, Kraft Foods, and VacuWare to just name a few. In addition he now appears regularly on HSN ( Home Shopping Channel ) and The Shopping Channel Canada as well as National Infomercials and Tradeshows.

Chef Rick has experience in many media outlets, live appearances, press tours, news shows, morning shows, radio, infomercials, cook books, and currently co-hosts a cable cooking show called You Won't Even Miss it. He worked with Celebrities like the late Julia Child, Emeril Lagasse, Jarred Fogle from Subway and Martin Yen. He is sought after for recipe development by food companies and supermarkets. He develops many of the free recipes you pick up at the grocery store and tours supermarkets regularly teaching customers recipes and how to enhance their meals to get out of the "Food RUT". Quinoa Salad with Grilled Chicken

Ingredients

2 (6oz) chicken breasts (boneless and skinless)
4 cups water
10 ounces Quinoa (about 1 1/2 cups)
2 teaspoons salt (for water)
1 pound plum tomatoes, seeded and chopped
1/2 Vidalia onion chopped
1/2 cup Broccoli or Broccoli Rabe Chopped
1/4 cup fresh Italian parsley finely chopped
1 large garlic clove, minced
2 tablespoons White balsamic vinegar
Freshly Sea Salt and Fresh Black pepper
1/4 cup extra-virgin olive oil

Directions

Bring water to a boil in a 4 quart sauce pan, add 2 teaspoons of salt. over high heat. Reduce the heat and add Quinoa (medium), cover, and simmer until the Quinoa  is tender, about25- 30 minutes. Drain well, and then place in a large bowl to cool set aside.

While the Quinoa Cooks, Season your chicken breasts with salt and pepper and grill on outdoor grill or indoor grill. Cook until internal temperature of the thick part of the breast reaches 165 F. remove from grill and let cool.

Wash and cut tomatoes, onion, Broccoli and parsley add to the Quinoa, and toss to mix. 
In a small mixing bowl, whisk together the garlic, vinegar, salt, pepper, and olive oil to form the  vinaigrette , add ¾ to the faro salad and toss to coat evenly .

Next slice the chicken breast on a bias cut (at an angle) into ½ thick strips.  Place one or two generous scoops of the Quinoa salad onto your serving plates (2) top with sliced chicken breast, garnish with parsley and serve with remaining dressing.

Chef Rick Tip: You can make the salad in advance and it can be refrigerated. Then add your chicken, when ready to eat.

01/15 Michael O'Neill

Renowned actor Michael O’Neill portrays “Mayor Ted Bennett” in the new CBS series, “Vegas” and can also be seen as New York Hawks’ interim General Manager “Hank Griffin” on the USA Network series, “Necessary Roughness.”  O’Neill’s road to an acting career began a few days before O’Neill was to graduate from Auburn University in 1974.  He received a call which would change his destiny.  Actor Will Geer, who was currently on the acclaimed CBS series, “The Waltons,” was given a copy of an audio speech O’Neill delivered at the University.  Geer tracked down the young student and impressed with his presentation, told him to consider acting before the “corporate structure snapped him up”.  With no prior acting experience, O’Neill was intrigued; it was too rare an opportunity not to be taken seriously. The only thing O’Neill knew for sure was that he did not know anything, but if Mr. Geer was willing to teach, he was willing to learn.  Soon after, O’Neill packed his car, and without a clue as to what his destination looked like, drove to Los Angeles. He spent the next four years studying under the tutelage of Geer and his very talented daughter, Ellen Geer, at Theatricum Botanicum.  From Robert Frost to Mark Twain to Woody Guthrie, O’Neill learned about American drama and literature and began to appear on television, most notably in “Shirley,” starring Shirley Jones and John McIntyre, which enabled O’Neill to secure his Screen Actors Guild card.  With a dream of the New York stage, O’Neill left Los Angeles and moved to NYC.  O’Neill joined the ranks of other New York based actors auditioning for roles, but with no offers on the horizon, he survived on a variety of odd-jobs as a carpentry, a bike messenger and a rail yard worker unloading box cars. Eventually, O’Neill started landing roles in TV commercials and off-Broadway productions, which led to his first film – an offer for the feature “Ghost Story,” which starred Fred Astaire and Melvyn Douglas in their last film roles.  Ironically, O’Neill received the role when the director’s first choice couldn’t drive. He got a late night call from his agent asking if he had a driver’s license.  “You bet your ____ I do,” O’Neill responded. Even on the days he was not filming, O’Neill felt compelled to be on the set and learn from the masters. Ellen Geer had taught him early on that acting was always an apprenticeship. Since that time, O’Neill has worked with some of the industry’s most respected film actors Leonardo DiCaprio in Clint Eastwood’s “J. Edgar”, Matt Damon (“Green Zone”), Shia LeBeouf and Jon Voight (“Transformers”), Robert DuVall and Michael Caine (“Secondhand Lions”), Toby McGuire (“Seabiscuit”), Al Pacino (“Sea of Love”), Susan Sarandon (Lorenzo’s Oil), Michael Douglas (“Traffic”), Andy Garcia (“Jennifer 8”), Vera Farmiga (Nothing but the Truth), Morgan Freeman (“Dreamcatcher”) and Hal Holbrook (“Flying Lessons”). O’Neill received some of his most notable accolades for his wrenching performance as Red Pollard’s father, broken by the Depression and unable to hold his family together, in “Seabiscuit.” In 1992 when the IATSE strike shuttered NYC productions, O’Neill moved back to Los Angeles and after a variety of television episodic appearances, he landed a one day role on “The West Wing.”  That one day turned into a six season run as fan favorite “Secret Service Agent Ron Butterfield” on the series.  Following, he portrayed wheel chair bound veteran, “Sgt. Major Ron Cheals,” in “The Unit.”  A turning point in O’Neill’s impressive television career, which has included roles on “NCIS, “Numb3rs,” “Sons of Anarchy,” “Leverage” and “Criminal Minds,” was his critically acclaimed portrayal of “Gary Clark”, an unstable widower seeking murderous revenge, on “Grey’s Anatomy.”  It was one of the most watched season finales in the history of television. Born and raised in Montgomery, Alabama, Mr. O’Neill holds a degree in Economics from Auburn University. He is married to Mary O’Keefe O’Neill and has three wonderful daughters. He divides his time between Los Angeles and Birmingham. An enthusiastic golfer, O’Neill is also involved in numerous charities including The Shjon Podein Children’s Foundation, which was established to improve the quality of life and provide support to children facing extraordinary difficulties in their lives.

01/08 George Lazenby, James Bond, On Her Majesty's Secret Service, The Hollywood Show

Special guest George Lazenby talks about his upcoming appearance at The Hollywood Show!

George Lazenby was born on September 5th, 1939, in Australia. He moved to London, England in 1964, after serving in the Australian Army. Before becoming an actor, he worked as an auto mechanic, used car salesman, prestige car salesman, and as a male model, in London, England. In 1968, Lazenby was cast as "James Bond", despite his only previous acting experience being in commercials, and his only film appearance being a bit-part in a 1965 Italian-made Bond spoof. Lazenby won the role based on a screen-test fight scene, the strength of his interviews, fight skills and audition footage. A chance encounter with Bond series producer Albert R. Broccoli in a hair salon in 1966, in London, had given Lazenby his first shot at getting the role. Broccoli had made a mental note to remember Lazenby as a possible candidate at the time when he thought Lazenby looked like a Bond. The lengths Lazenby went to to get the role included spending his last pounds on acquiring a tailor-made suit from Sean Connery's tailor, which was originally made for Connery, along with purchasing a very Bondish-looking Rolex watch. Lazenby quit the role of Bond right before the premiere of his only film, On Her Majesty's Secret Service (1969), citing he would get other acting roles, and that his Bond contract, which was fourteen pages thick, was too demanding on him. In his post-Bond career, Lazenby has acted in TV movies, commercials, various recurring roles in TV series, the film series "Emmanuelle", several Bond movie spoofs, TV guest appearances, provided voice for several animated movies and series, and several Hong Kong action films, using his martial arts expertise.

01/01 Steve Lawrence

Born Stephen Leibowitz, 8 July 1935, Brooklyn, New York City, New York, USA. The son of a cantor in a Brooklyn synagogue, Lawrence was in the Glee club at Thomas Jefferson High School, where he began studying piano, saxophone, composition and arranging. He made his recording debut for King Records at the age of 16. The record, "Mine And Mine Alone", based on "Softly Awakes My Heart" from Samson & Delilah, revealed an remarkably mature voice and style. Influenced by Frank Sinatra, but never merely a copyist, Lawrence's great range and warmth earned him a break on Steve Allen's Tonight television show, where he met, sang with and later married Eydie Gorme. He recorded for Coral Records and had his first hit in 1957 with "The Banana Boat Song". It was the infectious "Party Doll" which gave him a Top 5 hit in 1957 and he followed that same year with four further, although lesser successes, namely "Pum-Pa-Lum", "Can't Wait For Summer", "Fabulous" and "Fraulein". During his US Army service (1958-60) he sang with military bands on recruiting drives and bond rallies.

Back home he and Eydie embarked on a double act, their most memorable hit being "I Want To Stay Here" in 1963. As Steve And Eydie they made albums for CBS Records, ABC Records and United Artists Records, including Steve And Eydie At The Movies, Together On Broadway, We Got Us, Steve And Eydie Sing The Golden Hits and Our Love Is Here To Stay, the latter a double album of great George Gershwin songs, which was the soundtrack of a well-received television special. Lawrence, on his own, continued to have regular hits with "Portrait Of My Love" and "Go Away Little Girl" in 1961/2, and enjoyed critical success with albums such as Academy Award Losers and Portrait Of My Love. As an actor he starred on Broadway in What Makes Sammy Run?, took the lead in Pal Joey in summer stock, and has acted in a crime series on US television. During the 70s and 80s he continued to record and make television appearances with Gorme, with the couple gaining a record-breaking seven Emmys for their Steve And Eydie Celebrate Irving Berlin special. The couple also joined Frank Sinatra on his Diamond Jubilee Tour in 1991.

12/25 Carol Burnett

Carol Burnett started in show business as an occasional stage actress, sometimes nightclub singer, and more often a hatcheck girl. After a few years barely making ends meet, 22-year-old Burnett first appeared on television in 1955, playing the dummy's romantic interest in 13 episodes of The Paul Winchell and Jerry Mahoney Show, a kids' program that aired on Saturday mornings (Winchell was a ventriloquist, Mahoney was his dummy). At 23, she was cast as Buddy Hackett's girlfriend on Stanley, a NBC prime time sitcom set among workers at a hotel's newsstand, and written by Neil Simon and Woody Allen, among others. At 23½, she found herself unemployed when the program was cancelled, and for a time she worked as an usher at a Hollywood movie theater.

Burnett bounced back with a parody pop song, "I Made a Fool of Myself Over John Foster Dulles," confessing her love for the utterly unsexy, 68-year-old Secretary of State who is now best remembered as the namesake for Dulles Airport outside Washington DC. The song became a minor pop hit after Burnett sang it on Jack Paar's Tonight Show in 1957.

After that, she was a frequent panelist on the game show Pantomime Quiz. In 1959, she joined the ensemble cast of The Garry Moore Show, a popular comedy-variety hour, while concurrently starring on Broadway in the musical-comedy Once Upon a Mattress, based on the children's story The Princess and the Pea. In a memorable Twilight Zone, she played a klutzy but contented single woman offered a life of glamour by her guardian angel. She had a recurring role as a tough female Marine in Gomer Pyle U.S.M.C., becoming good friends with its star Jim Nabors, who was later her traditional first guest every season on her variety show. Burnett appeared in several episodes of her friend Lucille Ball's The Lucy Show, and she was a regular on the mid-1960s variety show The Entertainers with Art Buchwald and Bob Newhart. After that show ended, Ball offered to produce a sitcom for her, but Burnett declined, fearing she might feel stifled playing the same character week after week.

Instead, Burnett and her husband, producer Joe Hamilton, crafted a variety hour around her talents.

The Carol Burnett Show premiered in 1967, ran for eleven years and won 22 Emmys. Recurring sketches included the tight-skirted secretary Mrs. Wiggins, the Southern-fried bitch Eunice of Mama's Family (later spun off to its own sitcom), and the bad actress star of the soap opera parody As the Stomach Turns. There were also spoofs of classic movies, most memorably Burnett as Scarlett O'Hara in Gone With the Wind, wearing a dress made from the drapes -- complete with curtain rod (the dress was maniacally designed by Bob Mackie). For no particular reason, she would occasionally belt out a Tarzan yell, and at some point in every show Burnett would take questions from the audience, usually coming up with an answer that was either heartwarming or hilarious.

Burnett had perfect chemistry with her supporting cast, Harvey Korman, Vicki Lawrence, and Lyle Waggoner, and through the show's first seven seasons there were no cast changes. When Waggoner left he was replaced with Tim Conway for the eighth and subsequent seasons. The show was always funny but never mean or risqué, and in an era with only three channels, audiences of all ages tuned in to see what wacky skits Burnett would perform each week. On video, The Carol Burnett Show has been repackaged as Carol Burnett & Friends, and unlike some alleged comedy classics, no-one who rents the videos could possibly be disappointed.

She worked occasionally in feature films, including Noises Off with Michael Caine, Robert Altman's A Wedding, and The Four Seasons with Alan Alda. Her best TV films include the Vietnam survivors' drama Friendly Fire,Eunice (the pilot for Mama's Family), and three separate TV adaptations of her Broadway hit Once Upon a Mattress in 1964, 1972, and 2005.

In 1986 she starred in Fresno, a six-hour mini-series spoofing Dallas and Dynasty, with Burnett as Fresno's hard-drinking raisin matriarch Charlotte Kensington. With Charles Grodin, Teri Garr, Dabney Coleman, and Gregory Harrison, it was funny to the finish, but has never been released on video in America.

In 1990 she starred in Carol & Company with Jeremy Piven and Peter Krause, an anthology series with a half-hour comedy skit each week, but it was quickly cancelled. In 1991 she revived her Carol Burnett Show in name and format but with a new supporting cast. . Later in the 1990s, she played Helen Hunt's mother on Mad About You.

Her second husband, Joe Hamilton, had been a jazz musician, but after marrying Burnett he produced most of her starring projects. Their daughter, Carrie Hamilton became an actress, starring in the TV movie Hostage with Burnett and in touring productions of Rent, before dying of lung cancer in 2002. Another daughter, Erin Hamilton, has had several hits on the dance charts, including covers of "Dream Weaver" and Cheap Trick's "The Flame."

By virtually all accounts, the good-natured wise-cracking Burnett seen on her variety show was the real Carol Burnett. Her beloved grandmother, Mae Eudora Jones White, died in 1967 at the age of 82, but Burnett never stopped tugging her ear at the end of every episode. In the show's third season, Burnett received a résumé from a 10-year-old fan who wanted a career in comedy -- Jim Carrey, who received a long, personal letter of encouragement from Burnett. When she received her star on Hollywood Boulevard, Burnett had it placed in front of the theater where she had been an usher. And in 1989, when Burnett's friend Lucille Ball died suddenly on Burnett's birthday, Burnett received a bouquet from Ball several hours after hearing the sad news -- Ball had ordered the flowers in advance for Burnett's birthday.

Hamilton, her husband, wrote the theme song for The Carol Burnett Show, which she sang at the end of every episode. "I'm so glad we had this time together, just to have a laugh or sing a song, seems we just get started and before you know it, comes the time we have to say, 'So long.'" And then Burnett would wave and shout, "Good night, everybody."
